Shawarma is a Middle Eastern street food originating in the Levant. It is made from meat, traditionally lamb or mutton, but also chicken, turkey, beef, falafel, or veal, that is thinly sliced and stacked on a vertical spit. The meat is roasted and shaved off the spit as it cooks, ready for serving.
