Khao soi is a Thai noodle soup primarily served in Northern Thailand. Its development is linked to Chin Haw Muslim traders, and a comparable dish, ohn no khao swè, is found in Myanmar. A distinctive feature involves the traditional preparation of its wheat noodles, where the dough is steamed on a cloth over boiling water before being rolled and cut.
