Sabich, also known as sabih, is a sandwich made with pita or laffa bread, stuffed with fried eggplants, hard-boiled eggs, chopped salad, parsley, amba, and tahini sauce. It is based on a traditional Iraqi Jewish breakfast and is now a staple of Israeli cuisine. The modern sandwich was created in Israel in the early 1960s by Iraqi Jewish immigrant Sabich Tzvi Halabi, who combined ingredients traditionally served separately into a single pita.
