Love Ganshan. Chef Ray and his team do a masterful job executing all levels of hospitality. The staff, a very friendly welcoming group of people who just want to make you feel at home are simply delightful. The food is layered with copious amounts of flavor and technique. Moreover, the coconut red curry and ganshan rice bowls both smash the mark. If you’re looking for a subtle, indelible ode to Asian cooking in the Asheville area, Ganshan is the way to go! Can’t wait for more!

Atmosphere great with wonderful outside seating. Service was pretty nice as well. The food was SO SALTY though. I got the Dan Dan Brussels. Salty. My friend got a curry dish. Also salty. I love salty food and add salt to everything but I could feel my blood pressure rising as I ate it. Gan shan why you so salty?!

Gan Shan West is a well-liked spot with indoor & outdoor seating, & is popular for takeaway. Find some nearby street parking, & order at the counter, where they offer a section of sakes & ciders, as well as some sodas & sparkling water. The indoor atmosphere is minimal & clean, & the outside dining is lovely, with a casual courtyard-style atmosphere & string lights (bus your own tables). I have, unfortunately, never enjoyed the food on any of my visits. My fiancée has found hers fine, but nothing glowing or noteworthy to report. The balance in their acidity & umami ratios always feels off. I don't think I've ever finished a dish, because they are over or underwhelming. The service is friendly, the charm is immediate, & the prices are on par with similar local fare. Plenty of vegetarian & gluten-sensitive options available. Gender neutral washroom, wheelchair-accessible, & lots of smiles.
