A fish steak, also known as a fish cutlet, is a specific cut of food fish. It is characterized by being sliced perpendicular to the fish's spine, distinguishing it from fillets which are cut parallel. These cuts can either include bones or be boneless, and may be prepared with or without the skin. Fish steaks are generally made from fish weighing more than 4.5 kilograms (10 lb).
