Originally founded as a wine bar in 2001, Rutz transformed into a restaurant under the direction of Executive Chef Marco Müller. The establishment is family-run by owners Anja and Carsten Schmidt. In 2024, Rutz celebrated its 23rd birthday and Marco Müller's 20th anniversary with the restaurant.
The restaurant is open Monday to Friday from 6:00 pm, with the last reservation taken at 7:30 pm. Given its three-Michelin-star status and high demand, it is highly recommended to make reservations well in advance.

We celebrated a birthday at Rutz, and it was a truly wonderful evening from start to finish.
What made the experience even more special was how accommodating the team was in allowing us to bring our little dog. We really appreciate that a fine dining restaurant takes this into consideration, it meant we could fully relax and enjoy the evening without worrying about rushing home to our fur baby.
The food was exceptional, with creative dishes showcasing beautifully sourced local ingredients. We were also delighted by the non-alcoholic drink pairing, which was thoughtful, refined, and complemented the menu perfectly.
The service was warm, attentive, and professional throughout, making the entire celebration feel effortless and memorable.
We enjoyed the experience so much that we’ll be back very soon to celebrate our friends’ wedding. Looking forward to another fantastic evening! ⭐️
Absolutely amazing experience. I was super sick that day but couldn’t cancel on time, I’m glad I didn’t. Even tho I wasn’t at my 100% the flavours in every dish were amazing!! Technically perfect, not much they can improve tbh. All the temperatures, textures, techniques were executed perfectly. Service super friendly and attentive, timing between every dish was long enough to enjoy the company and the place but not to long. It took us 4 hours to go through the tasting menu, but time flew! Nice detail with the soap, every time I use it and smell it, reminds me the restaurant. Amazing experience! Thank you!

It was a beautiful and very interesting gastronomic experience with sophisticated dishes and truly attentive, professional service. The trout dish was definitely the highlight for me absolutely incredible, although it tasted quite similar to the rabbit course, so there wasn’t much contrast between the two. I also really enjoyed the sand carrot, the dessert, and the wine selection, which was thoughtfully curated and paired very well with the menu.
On the other hand, the oyster course was a disappointment for me, and the presentation with the plastic decoration didn’t feel like the best choice either it came across a bit distracting considering the otherwise elegant concept of the entire experience. The lamb course also didn’t really stand out and felt like the weakest dish compared to the rest of the menu.
Overall, it was definitely an interesting fine dining experience worth trying for the atmosphere and excellent service, but personally, I probably wouldn’t return for a second visit.

Dining at Rutz was, without question, an experience that demonstrates remarkable technical skill, creativity and precision. The restaurant has created an elegant and refined atmosphere, with a sophisticated dining room that immediately conveys why it has earned its Michelin recognition. The service team is attentive, professional and passionate.
However, there were aspects of the experience that prevented it reaching the exceptional standard I anticipated.
Throughout the evening there was a large number of staff involved in serving each course. While each server was courteous and knowledgeable, the constant rotation of servers made the experience feel fragmented. Different people would arrive to present, serve, clear or explain dishes, which at times became confusing rather than seamless. Fine dining should feel effortless and cohesive, but on this occasion the service felt over choreographed.
The cuisine is unquestionably imaginative and technically accomplished. Every plate resembled a carefully curated work of art, with meticulous presentation and evident attention to detail. However, there were several courses where the pursuit of artistic expression outweighed the enjoyment of the food itself. While visually captivating, dishes lacked depth of flavour and came across as restrained. Delicacy is one thing, but there were moments where subtlety crossed into blandness, leaving me wishing for more balance between visual creativity and taste.
I found the storytelling surrounding the dishes somewhat underdeveloped. Modern Michelin dining often succeeds because each course tells a story, whether about regional heritage, the chef’s philosophy, local producers or the inspiration behind the composition. At Rutz, many of the presentations felt limited to a straightforward description of the ingredients, essentially explaining what was on the plate rather than why it mattered. I had hoped to gain a greater appreciation of the history, cultural significance or creative journey behind each course. A richer narrative would have transformed the meal from an impressive technical display into a more emotionally engaging experience.
The wine pairing was another element that left mixed impressions. It began exceptionally well, with the opening selections complementing the early courses beautifully. The progression felt thoughtful, balanced and enhanced both the food and the wines themselves. Midway through the menu, however, the pairing lost direction. Some wines felt disconnected from the dishes, making the overall progression less coherent. Fortunately, the final stages of the pairing regained their focus, concluding with some excellent selections that restored confidence in the overall concept and provided a memorable finish to the evening.
Overall, Rutz undoubtedly deserves recognition for its innovation, technical execution and ambition. It offers an experience that many diners will admire, particularly those who appreciate culinary experimentation and artistic presentation.
For me, however, the evening highlighted that exceptional fine dining is about more than technical perfection. The most memorable restaurants create harmony between flavour, storytelling, service and atmosphere. While Rutz excels in creativity and craftsmanship, I left feeling that greater emphasis on flavour, more cohesive service and richer narratives behind each course would elevate the experience from impressive to truly unforgettable.
I would also encourage the restaurant to provide greater clarity during the reservation process regarding the €600 payment. It was not immediately apparent that this amount functions as a booking fee rather than being credited towards the final account. Clearer communication at the outset would help manage guests’ expectations.
With a total expenditure of €1,544 for the evening, I anticipated an experience that was exceptional in every respect. Unfortunately, I left still feeling hungry and, despite recognising the considerable technical skill and creativity involved, ultimately underwhelmed and disappointed.
