Everything was delicious! Each dish was truly special and unexpected - from the white chocolate (but still savory) sauce with the crab flautas, to the nice balance of Parmesan and Gruyère sauce paired with citrus fruit slices in the duck confit, to the bit of a kick in the after taste of the mocktail. It was also really fun to have a front row seat to the kitchen. Definitely recommend! My only regret was being too full to order dessert!
Another excellent dining experience, really unique and distinctive style across the building exterior and interior. Enjoyed the long table type communal dining and open kitchen, service from all the staff was exceptional and the food was incredible. Another must visit in Guadalajara!

Hueso is one of those places that makes you glad you traveled. The concept — an all-white space filled with thousands of animal bones — sounds gimmicky on paper but works beautifully in practice. It's art-gallery-meets-open-kitchen, and the plates themselves look like museum pieces.
We did the six-course prix fixe (1,200 MXN / ~$60 USD) which is the way to go. The chef selects their best dishes and the server explains each one in detail as it arrives. A standout was a risotto with mushrooms including huitlacoche — the "Mexican truffle" fungus that grows on corn — earthy, complex, and unlike anything you'd get elsewhere. You can watch everything being prepared in the open kitchen, which adds to the experience.
What surprised us most was the social atmosphere. They actively encourage guests to talk to one another, and the communal energy made the room feel alive. We noticed several groups of American visitors and honestly wished we'd struck up a conversation — it felt like the kind of place where that would have been welcome and fun.
They greeted us in English the moment we walked in, clearly experienced with international guests. Service was attentive and knowledgeable without being stuffy.
Only note: they open at 7:30 PM, which may feel late if you're not adjusted to Mexican dining hours. But in Guadalajara, that's how you know it's the real thing.

It would be straight 15 stars if some of the hysterics loud guests could be domesticated ! But the restaurant is a must for every foodie ! Greats gastronomic experience with The tasting menue Will return for sure
