Maxwell Fuzhou Oyster Cake at Maxwell Food Centre is a true standout, earning its Michelin recommendation with a unique twist on a local classic. This humble stall delivers an exceptional culinary experience, where every bite of the oyster cake tells a story of tradition and innovation.
The oyster cake is a marvel of contrasts: its outer layer is perfectly crispy, offering a satisfying crunch that gives way to a soft, succulent interior. This delightful juxtaposition creates a multi-dimensional sensory experience that has food enthusiasts raving. The crispness on the outside locks in the flavor, while the gentle softness inside ensures that each oyster is tender and brimming with freshness.
At the heart of the dish are the oysters, carefully selected for their quality and freshness. They mingle harmoniously with a subtly seasoned batter, allowing the natural brininess of the seafood to shine through, complemented by a nuanced blend of spices that enhance rather than overpower. The balance of textures and flavors is a testament to the stall’s dedication to perfection and traditional culinary techniques.
Got 1 small prawn inside. Is a good experience and good snack for teatime. Price abit high but still good taste. Can drop by to check it out if nearby ...no need specially come for this.

The Fuzhou Oyster Cakes were really good—perfectly crispy on the outside and packed with savory, traditional flavors.
What truly made our visit memorable, though, was the incredible kindness of the gentleman running the stall.
As foreigners, we were struggling a bit to figure out the local payment options. He patiently stepped in and helped us understand exactly what to do. His outstanding hospitality was deeply appreciated. Highly recommended for both the unique heritage snack and the wonderful service!

It used to be even better. The Fu Chao Oyster Cake was once plumper, juicier, and beautifully golden — not so brown or charred. Although deep-fried, it used to have that perfect crisp crunch on the outside and moist texture inside, with a lovely hint of peanut that tied everything together.
This time, it felt a little thinner and less moist, and the texture wasn’t quite as crunchy as before. I’m not sure what changed, but it doesn’t taste exactly like it used to.
That said, it’s still tasty — the flavor remains comforting and true to tradition, and it’s still one of the few places that keeps this nostalgic snack alive. For the price, it’s fair and satisfying. I just hope they bring back that old magic that made it truly unforgettable.

Crispy on the outside but ultimately underwhelming in flavour. Given its Michelin mention, I expected more depth and balance. Not bad, but certainly not memorable or worth going out of the way for—especially in the heat.
