We ate here for the first time on our most recent Vegas trip. To put it simply - it was the best meal we have ever had in Vegas in recent years. We had the table side caesar salad - amazing, possibly the best we have ever had in the likes of a CS. Next we had the lobster meatballs - WOW. The star of the show was the lobster fettuccine - it was possibly some of the best pasta we have ever had. You could taste the freshness. The sauce was absolutely phenomenal. Lobster was also done perfectly. Our server was amazing and I apologize I do not remember her name. The whole experience here was a 10/10. Also big shout out to Irene for helping with our reservations and being so kind and helpful!
Carbone Riviera was hands down one of the best dining experiences we’ve had in Las Vegas. The service was impeccable from start to finish, and every course felt special.
The bread service with the pickled onions, vegetables, and accompaniments was absolutely fabulous and a perfect way to start the meal.
The Caesar salad was excellent and prepared tableside, which was fun to watch. The croutons were to die for! We also appreciated that the anchovies could be served on the side since they’re not our favorite.
The Spicy Rigatoni Vodka was packed with flavor, though it could have been spicier—it was rich, creamy, and absolutely delicious. The ribeye was outstanding—perfectly cooked, tender, and incredibly flavorful. The Dogana Potatoes were crispy on the outside, creamy on the inside, and the perfect side dish.
To finish, we had the coconut cake, and it was truly one of a kind. Light, moist, and absolutely delicious.
As if the meal wasn’t memorable enough, we had a front-row view of the Bellagio fountains, which made for an unforgettable and eventful evening. Carbone Riviera absolutely lived up to the hype, and we can’t wait to return!

Carbone Riviera was an incredible experience from start to finish. The food was absolutely amazing—every dish was full of flavor and beautifully prepared. The restaurant itself is stunning, and one of my favorite parts was the outdoor seating next to the fountain. The view creates such a relaxing and elegant atmosphere, making the entire meal even more enjoyable. The service was excellent, with friendly and attentive staff who made us feel well taken care of. This is definitely one of the best dining experiences I’ve had in Las Vegas, and I can’t wait to come back. Highly recommended!

We went with a group of 10 and had excellent service and food, and the atmosphere was great! I've read a few reviews where it says the service was slow and people were seated late, but our group has the opposite experience. We arrived about 15 minutes ahead of our reservation time and were told our table was ready for us. The restaurant is beautifully decorated and has sparkly mosaic tiles that glitter from the low lighting, it's a very fun dinner atmosphere. We had a great view of the Bellagio fountains and had excellent servers who checked on us multiple times throughout the meal to ensure we weren't waiting for anything.
With a group as large as ours (10 people) we had an opportunity to try so many options on the menu. The lobster polpette was a group favorite, as well as the table-side caesar salad. We had the lobster, limon pollo, spicy rigatoni, lobster fettuccine alfredo, ravioli, steak, and I'm sure a few others I'm not remembering - overall, the groups feedback was everything was amazing. For dessert we had the death star, the cheesecake and an affogato, which were all a great way to end the evening.
This restaurant is located next to Prime at Bellagio, which is also a great option if you aren't able to get into Carbone Riviera.

This place is amazing. This is a must if you are coming to Vegas. Delicious food. It was a beautiful romantic atmosphere. You can even sit right in front of the fountains. We enjoyed our experience here. Would highly recommend to everyone. It was just perfect! The servers were so helpful and nice too.
